Extra Virgin olive oil
straight to your table

It is a limited edition Extra Virgin Olive Oil of the Verdeña variety, early collection, in the veraison, and from ancient olive trees cultivated in an artisanal way from various places in the town of Salas Altas, in Somontano de Barbastro, province of Huesca.

Our origins

¨Resalau¨, is the nickname that accompanies a family, deeply rooted in the rural and agricultural world, as far as we know. There are many surnames that throughout history have shaped the family ancestry until today: Boira, Pano, Cosculluela, Subías, Bistuer … they are the surnames that we know, reaching up to the current generation: Cosculluela Bistuer .

The funny thing is that we know nothing about the person who gave rise to that singular word “Resalau” that possibly described some personality trait of the same. It has served and has been used over time by known people and not so known, to mention and name a family saga, superimposing it at all times to the proper name or family surname.

Today with the Merger product, we acknowledge all our ancestors, surely it would be a great pride for them, as well as satisfaction for all those who have the opportunity to try it.

Location

We are located in a privileged area: in Somontano of Barbastro, in the town of Salas Altas, Huesca province.

As the etymological origin of the word Somontano says, it is a transition zone between the valley and the mountain. We are next to the Sierra de Guara, by latitude we are in the geographical center of the province, between 500 and 650 meters above sea level. An area with seasonal climatic variability, cold winters, hot and dry summers, without reaching extreme levels, and which allows olive cultivation to express itself with its own uniqueness.

Olive cultivation is a minority in the area. This, which in its day mainly populated the places of the area, gave way to the cereal fields in the 70s, a product of agricultural mechanization, and to the vineyard plantations that would arrive in the 90s, thanks to the successful D.O. Somontano of wines.

Currently we have proposed to cultivate in an artisan way and recover a part of those olive trees, olive trees mainly of the “VERDEÑA” variety, which were possibly planted by RESALAU or by friends and neighbors of the time, today becoming more than centenarians, bicentennials or even more.

By Resalau

The extra virgin olive oil (A.O.V.E) is the juice of the olive, its true factory is the olive tree itself. The quality depends solely on the process of caring for the olive tree and the subsequent handling of the olive (from its collection to the packaging of the final product). Factors such as: time and state of the fruit at harvest, transport to the oil mill, oil extraction (speed and temperature), filtering method and time, and its subsequent conservation (preservation of temperature and light) are vital to obtain a “PREMIUM” product.

“Merger” names a limited edition A.O.V.E of the Verdeña variety, early harvest, in the veraison, which provides a high content of polyphenols, from ancient olive trees recovered and from various places in the town of Salas Altas.

Tasting note: extra virgin olive oil (A.O.V.E) fruity green, intense, balanced on the palate and complex, with different olfactory descriptors and taste attributes that we want our customers to discover.
